Ingredients:
1 lb boneless skinless chicken breasts
1 can cream of chicken soup
1 cup salsa
1 package taco seasoning
1 cup sour cream
1/2 cup shredded cheese
(You can also add black beans and corn if you'd like.)
Directions:
Put everything except sour cream and cheese in slow cooker. Sprinkle taco seasoning over everything. Stir to coat everything well. Cook on low for 5-6 hours. If shredding the chicken, pull the breasts out and shred a few hours in; return back to slow cooker. Stir in sour cream and cheese about 30 minutes before it is finished, then heat until everything is combined.
We ate this over brown rice...yummy! You can also put the mixture in a tortilla and have something like chicken tacos. It's good reheated the next day too. Enjoy!
